Chef Andrew Dekannwarri - Dish: Creole Mussels
Ingredients
- 1lb mussels
- 2 tblsp Olive oil
- 25g Cultural Spice
- 4oz Garlic
- 2 Large onions
- 10floz red wine
- 10floz fish stock
- 1 tin chopped Tomatoes
- Small bunch coriander
Method
Wash mussels thoroughly.
Then put chopped onions, garlic & spice to a hot pan.
Then in goes your mussels wait 2-5 five minutes.
Then add wine and allow mussels to open (approximately 5 minutes)
Add stock and chopped tomatoes.
Finish with coriander and allow to simmer for five minutes.
